WANTED: AWESOME, YuMMy Recipes

I like to cook.  In fact, i take great pride in cooking.  I think I'm a pretty good cook - and Bill is either a great liar, or he thinks I'm the best cook he's ever known.  (I think my Red Beans and Rice snagged his heart before we were even an item!)  I would like recipies for the following:

1.  Empanadas - Bill and i both get weak for mexican food.  A new friend just gave me an awesome recipe for guac (thanks Bertha!) and I make awesome enchilidas suizas. (Holly said mine are better than the restuarant - such a great compliment!) Lately, i've been craving a good spicy empanada.

2.  Anything Soup - the whole family loves soup.  It makes bodies sooo happy - and it is so easy to make.  I would love a good chicken enchilida soup recipe, italian wedding, minestrone, etc.  SoUP there it IS!

3.  Chicken Pot Pie - It's one of my weaknesses.  I love chicken pot pie - I wish i could make a decent one.  It doesn't seem like it would be that difficult to make but I have yet to come across a recipe that was tasty. It would probably help if I could make a decent pie crust but I suck at that.

4. Any recipe that uses Boursin cheese.  its a yummy cheese - I kinda think it is fake cheese.  i don't even know what it's made from - probably better I don't - but I love it on crackers, bread, steak, everything.  I wish I had some recipies that could really play up the flavors in the cheese.

5.  potato salad - It's almost summer time.  Time for BBQ's.  makes me want potato salad but I haven't ever really had any that I thought was great.  I tend to like a good german potato salad.  The best potato salad I have ever had was at a 1 month birthday party, the grandmother was chinese, spoke no enlgish and make this ridiculously awesome german potato salad.  It set my potato salad bar.  

6.  Meatballs - I have been craving spaghetti and meatballs.  My mouth is watering for the meatballs my mom used to make.  I know how she made them but i can't ever get mine to taste like that.  I want a super yummy meatball recipe.I also wish i could make my own red sauce.  But that isn't an immediate need.  Rao's is awesome.

7.  Casseroles - Bill really likes it when I make a few things over the weekend that he can have during the week for lunch and the nights he gets home late from class.  I'm kinda bored with lasagna, red beans and rice, etc.  I would like some new tasty casserole recipes.

8.  Anything that used avocados - my new love.  I hated them as a child and i can't get enough now.  I love them in guac and in salads.  I wish i could think of good burger seasonsings that would go well with slices of avocado (I know Red Robin was an avocado burger but I haven't had it so I'm not sure what it tastes like.)

9.  I wish I could make curries from scratch.  I don't have the right spices for that and I have found some thai and Indian curry jarred sauces that aren't too bad.  I wish i could make more Thai and Indian recipes from scratch though.  Pad Thai, chicken with chili and basil, drunken noodles, green chicken curry, chicken tikka masala, naan, murgh biryani, that cucumber sauce you get with spicy Indian foods, spicy lentils.  All yummy.

10.  Recipes that will satisfy a sugar craving without requiring extra hours in the gym.  Ooh - and on this same note, potato recipes that won't cancel out an hour of cardio.  Potatoes, rice, and pasta are my biggest weaknesses.  i will never be able to do Atkins because I refuse to quit carbs.  I'm Asian for cryin out loud.  I NEED RICE!

I have a great chicken pot pie recipe from William Sonoma but I will have to find an electronic version (or make one) to send to you.
